last night we hosted our first official dinner. we had a guest and as befitting such an occasion we cooked our hearts out. last week when we came from the grocery vic suggested i make something with the pork chops and mustard, so i took the opportunity last night experiment.
here to the best of my recollection is the recipe:
pork chops in mustard
marinate pork chops to taste, in a variety of seasonings including cilantro, black pepper, onion, garlic, jerk seasoning [if available], lime juice and a touch of red wine.
using a large mixing bowl, mix two tablespoons of coarse whole dijon mustard, two teaspoons of mustard powder and a quarter cup of olive oil into a paste.
coat the pork chops, by hand if necessary, with mustard paste.
proceed to grill pork chops in a buttered skillet.
goes well with grilled baby potatoes with rosemary and side salad.
the experiment was a success, obviously or i wouldn’t be writing about it here, i know have something else to add to my repertoire. but i could make mention of dinner last night without the crowning glory of the night, the dessert.
vic made easy sticky-toffee dessert from the nigella recipe and served it with a choice of vanilla or coffee ice cream. it was amazing, hot from the over, layered with ice cream, we were in heaven
